Bill Gates soutient une start-up qui fabrique du beurre à partir de dioxyde de carbone

Savor, une start-up américaine soutenue par Bill Gates, a présenté son beurre complètement synthétique élaboré chimiquement à base de dioxyde de carbone et d’eau. Ce beurre végan s’inscrit dans une démarche de réduction d’empreinte carbone et d’innovation alimentaire durable. Savor espère rapidement obtenir les autorisations nécessaires pour commercialiser son beurre et travaille sur des versions synthétiques de la glace, du lait, du fromage et de la viande.

Le beurre du futur est végétalien et fabriqué à partir de CO2

Après le beurre doux et le beurre demi-sel, une nouvelle innovation vient révolutionner le monde des produits laitiers : le beurre au CO2. Cette invention signée Savor, une start-up américaine soutenue par Bill Gates, est élaborée chimiquement à base de dioxyde de carbone et d’eau.

Les ingénieurs de Savor utilisent un processus thermochimique pour associer de l’eau et du CO2 et créer ce beurre végan. Selon Bill Gates, cette méthode permet d’obtenir une matière qui ressemble à de la graisse d’origine animale et qui aurait le même goût que le beurre.

L’objectif de cette innovation est de réduire l’impact environnemental du beurre. L’élevage bovin étant une grosse source de pollution, la production de beurre traditionnel contribue à l’empreinte carbone. En utilisant du CO2 et de l’eau, Savor espère réduire cette empreinte et nourrir la planète de manière durable.

Savor espère rapidement obtenir les autorisations nécessaires pour commercialiser son beurre, mais l’entreprise ne compte pas s’arrêter là. De la glace, du lait, du fromage, de la viande, tous ces produits pourraient bientôt avoir leur version synthétique.

Reste à convaincre les consommateurs du monde entier, et surtout les Français, réputés pour leur amour du beurre et de la crème. Il y a du travail pour donner tort au chef Paul Bocuse, qui déclarait en 1976 : « En France, se passer du beurre et de la crème, c’est impossible ! »
